Bread Making



We have been discussing how yeast works...



  • Warmth is needed so that yeast cells can grow and multiply. This is why we add warm water. NB Boiling water kills yeast cells!

  • The yeast needs feeding to grow, so we add sugar to the recipe.

  • The dough needs to become elastic so that it will stretch and rise when the yeast begins to ferment. This is why we knead the bread.

  • We need to give the yeast time to do its work and to produce carbon dioxide gas which raises the dough.

  • A flour improver may be used to speed it up such as - Ascorbic Acid.

Yeast is amazing, it has tiny bacteria inside it, and these are living things, just like us. They need feeding which is why we put sugar in the bread mixture. The yeast then gives off carbon dioxide gas and this makes the bread rise. yest is cool!
